Errol’s Avocado Salad Recipe
Named in honor of family friend, Errol Wente, this is a favorite we’ve been making for years. This summery salad features loads of avocado which is an excellent source of fiber (10 grams/avocado!) and healthy fats. Goes wonderfully with oven baked salmon or grilled chicken for a satisfying lunch or dinner!
Errol’s Avocado Salad Recipe
Serves two (as a main salad)
Ingredients:
- 2 handfuls mixed greens
- 2 handfuls arugula
- 1/2 bunch green onions, chopped
- 1 avocado peeled and sliced
- 1/4 cup pumpkins seeds
- grated parmesan
Dressing:
- 1/2 lemon
- 4 tbsp extra virgin olive oil
- 2 gloves crushed garlic
- 1/2 tsp dijon mustard
- salt and pepper to taste
Toss all salad ingredients together, leaving a small amount of pumpkin seeds and green onions aside as a pretty topping. Mix together dressing quickly with a whisk until it emulsifies and looks opaque. Drizzle dressing over greens and toss. Sprinkle remaining pumpkin seeds and onions on top and serve along your protein of choice!
