The olive oil cake I shared on Instagram has been surprisingly popular so I think it deserves a permanent home here on the blog. I love the rustic, earthy feel of olive oil cakes which are the perfect September treat in my mind - a wonderful blend of summer's lemons and the upcoming olive harvest. I tested several olive oil cake recipes and this one from Bon Appetit was the clear winner both because it was utterly delicious and it barely touched my glucose levels. The quality of your cake will match the quality of your ingredients so be sure you use a nice EVOO as the cake calls for 1 1/4 cups of it and is obviously the star ingredient. I used Carapelli's Organic EVOO which tastes like a $30 olive oil but can be found everywhere (Target, Costco!) for ~$8! Serve it with the liqueur you used in the cake (I had Lillet on hand) for the perfect end to September's intimate dinners.
